To make this dosa healthier, you can reduce the quantity of ghee mentioned in the recipe. For example, if it calls for adding two tablespoons, add only one. This way, the dosa will have fewer calories.
To make perfectly crispy ghee podi dosa, there are several things you need to keep in mind. Always allow the dosa batter to ferment for some time before cooking. This ensures that your dosa has a nice texture. Also, remember to use a non-stick pan and a generous amount of ghee while it’s cooking. For best results, always keep the flame on low-medium.
The recipe for this dosa was shared by MasterChef Aruna Vijay on her official Instagram page. To make it, start by roasting urad dal and chana dal in a pan. Then, in a separate pan, roast dried red chillies, jeera, pepper, curry leaves, sesame seeds, hing, and salt. Transfer everything to a food processor and grind to form a smooth powder. Next, pour a ladleful of dosa batter onto a tawa and spread it evenly. Spread a generous amount of ghee all over the dosa. Sprinkle the prepared ghee podi masala and allow the dosa to cook for a few minutes. Once done, fold it over and cook for another 3-4 minutes. Your ghee podi dosa is now ready to be relished!
