One of the best parts of summer has to be mangoes. We all love making different dishes with this delicious fruit, such as mango ice cream, mango kheer, mango phirni, mango pudding, and everyone’s favourite mango shakes. But what do you do with the peel after you’ve enjoyed the fruit? If, like many people, you throw it away, stop right there. A video doing the rounds on Instagram shows you how to make pickle using just the peels. The caption of the video reads, “Kya aap isse khaate hain ya phenk dete hain? [Do you eat it or throw it away]?”
The process begins with placing mango peels in a cooker, followed by a spoonful of salt and a little turmeric. After adding half a cup of water to the cooker, it is placed on a stove. Three whistles later, the peels are taken out, and the water is stored separately in another container. The peels are then cut into small pieces. Next, a variety of spices are added to the peels and mixed well. In a wok, some oil is heated with hing and mustard seeds. Once they start to crackle, cumin seeds and mango peels are added to the wok. After stirring, the reserved mango water is poured into the wok. The mixture is cooked until the water fully evaporates and the oil separates.
